Job Description

EMPLOYEE RESPONSIBILITIES: Provide appropriate work clothes and safety shoes kept in a clean and neat manner.

Provide proper hair restraints and keep well-groomed, clean-shaven (neatly trimmed mustache and beard accepted) in a manner that meets State of Alaska Health Codes and Chugach Policies. Read and comply with all Chugach Electric Culinary Standard Operating Procedures.

GENERAL REQUIREMENTS: The head cook is responsible for the maintenance of the meal/feeding program at Beluga Power Plant, which includes but not limited to: compliance with all regulations set by the State of Alaska Department of Environmental Conservation, Chugach policy and safety regulations, menu, nutritional balance, preparation, ordering, receiving stock and stock rotation.

The supervision of other personnel assigned to the food service operation in the daily performance of their tasks in compliance with health department, company policy standards and safety regulations in a manner consistent with professionally accepted standards.

Preparation of daily menus meeting company guidelines for cost and heart healthy programs.
Maintain his/her working area in a clean and neat manner in accordance with State Health Department and company regulations.
Perform such other duties as may be necessary to ensure a smooth day-to-day operation of the facility.
Have knowledge of job descriptions other personnel in the food and barracks operation.
EXAMPLES OF DUTIES: Prepare menus and assists with ordering of groceries and other supplies.
Plan ahead for varying populations to be served. Review menu for regular and special diets.
Store and handle food in accordance to all health department regulations until ready for cooking.
Do meat cutting, bone fish and poultry, cook meats, seafood, poultry, vegetables, eggs, soups, sauces and food items in accordance with health department regulations.
Bake pastries, breads, pies, cakes, cookies, and various desserts as necessary. Prepare special diet items when necessary.
Operate mixers, choppers, shredders, grinders, steam kettles, fryers, slicers and other food service equipment.
Follow standard recipes, but may make independent decisions relative to method of preparation.
Test food with proper thermometer to determine if food is properly cooked and hot/cold temperature is maintained in accordance to health department regulations.
Mark and date all open food and food not in their original container and store them properly.
Determine if food is properly seasoned.
Portion servings according to menu combinations or special diets. Direct timing according to serving schedules.
Review menus and determine use of leftovers in accordance with health codes. Supervise food storage, handling and sanitation.
Clean and supervise cleaning and sanitation of utensils and equipment. Assist with the training of temporary hired personnel.
Report all safety hazards and equipment not in proper working order to your supervisor for maintenance.

QUALIFICATIONS: Head Cook qualifications at Beluga Power Plant are, but not limited to:

Current State of Alaska Food Worker card
Documented SERV Safe training
Minimum 7 years experience as camp cook, with at least 3 of these years as head cook.
Ability to read, write and communicate
Willing to fly in small aircraft
Willing to live in camp facilities for 7 days or more, working 12 or more hours per day
Be flexible to stay in camp when weather, sickness or other unforeseen problems prevent relief cook from arriving on schedule.
Able to work with and supervise other kitchen staff.
Must be able to lift 70 pounds or more
Must be free of health or physical problems that would interfere with duties or put at risk you or other personnel working at the Beluga Camp.
